Bacon Wrapped Dates

Sweet and Salty with Antioxidants

Dates are high in fiber and provide a variety of antioxidants. That’s a win for your family’s health, but they are also delicious. The sweetness of the dates may make them more appealing to children. As for the bacon, well, that’s just a divine addition. Bacon-wrapped dates are simple to make, and when they are baked, the dates are almost creamy and an exciting contrast to the crisp bacon. This recipe also has a little surprise in the middle: a whole roasted almond added for texture, flavor, and a few more nutrients.

Ingredients

Fresh dates with the pit removed

Whole raw or roasted unsalted almonds

Thin cut bacon

Toothpicks

Instructions

1.     Preheat the oven to 425 degrees F.

2.     Remove the pit from the dates. Use a knife to pierce the dates and wiggle the pit out.

3.     Stuff the date with an almond.

4.     Cut the strips of bacon in half.

5.     Wrap each date with bacon and secure it with a toothpick.

6.     Bake until the bacon is cooked, about 20 minutes. I turn the dates a few times to crisp the bacon all around.

Notes

Bacon Wrapped Dates retain the heat well, so let them cool for about 5 minutes before serving.

Serve these as an apéritif for entertaining or a first course for a family dinner.

"We have made a lot of progress over here under your care. We are now all eating from the same “pot” which I was surprised how much my kids loved. They were so excited when I put the food in the middle of the table. They asked for it the next day, Can we do that special fancy dinner thing where we have a feast? It really is such a better ritual—passing the food around and all sharing from the same platter, a real game changer."
