Inspired by a crab salad at the Ritz Carleton in Ft. Lauderdale, this salad is simple and divine.
For the salad:
Crab Claws or Small Lobster Tails
Butter Lettuce
For the dressing:
Creme Fraîche
Sherry Vinegar
A 1/4 clove of fresh minced garlic
Fresh Lemon Juice
Sea Salt or Celtic Salt
Fresh Ground Pepper
This is one of those recipes that I throw together without following a recipe. The ingredients are a guideline, modify it to your liking and taste as you are making the dressing.
I also add about 1/2 a teaspon of shallots, or herbs such as chives. My suggestion is not to use too much garlic or shallots, so as to not compete with the flavor of the crab or lobster.
Modify with the type of lettuce you like, such as mixed greens or green or red bibb lettuce.
Serve with a small piece of warm bread.
This is a fairly light main dish, so a heavier dessert would balance the meal.
