This is a simple version of vinaigrette dressing I adopted from my mother-in-law in France- -This recipe is fast and easy to make as you need it or you can make a batch to use throughout the week.

3 parts extra virgin olive oil
1 part sherry vinegar
1 1/2 tsp of Dijon Mustard
1-2 cloves of fresh garlic, minced
The quantities are guidelines, I never measure, and after you make it a few times, you won't either.

1. In this order, in a salad bowl, add olive oil, vinegar, Dijon, garlic, sea salt, and pepper. Stir with the spoon that you used to add the mustard.
2. Add the lettuce on top of the dressing right before serving. If you combine them too soon, the lettuce will "cook" in the dressing.
3. Place the bowl on the table, toss the salad well (a good job for kids) and serve.
