Leftover Salmon Pasta

People often tell me their family will not eat leftovers. My response is always, “What do you consider leftovers, and how do you serve them?” I think of leftovers as ingredients. The key to getting the family to approve of a second serving is to transform the leftovers into something new, something so good no one will think of them as leftovers. Eventually, you will find you want to make “leftovers “on purpose. 

Ingredients

Leftover salmon with lemon and thyme

Pasta

Heavy whipping cream

Instructions

1. Cut up the leftover salmon and add it to a frying pan along with any leftover juice. If you don’t have any leftover pan juice, you can add a pat of butter.

2. Add some heavy whipping cream. Just enough to create a sauce.

3. Warm the ingredients over medium heat and toss with pasta. 

4. Optional: add fresh thyme, parsley, a splash of white wine, or fresh lemon juice.

Notes

If you have a small amount of leftover salmon, make a small amount of pasta and serve a few other simple dishes to create a satisfying family dinner.
