Cranberry sauce takes just a few minutes and can be made days ahead of time. When you taste the difference in homemade, you’ll never buy a can of cranberry sauce again. This is a recipe from Food and Wine with a few modifications.
1/2 cup ruby port wine
Zest from one orange
1/2 cup fresh orange juice
12 ounces fresh cranberries
1/2 cup sugar
1. In a medium saucepan, combine the port with the orange zest and orange juice (see notes below) and bring to a boil.
2. Add the cranberries and sugar and simmer over moderately low heat until the sauce is jamlike, about 25 minutes. The aromas of the orange and sweet port wine alone are divine.
3. Transfer to a bowl and serve warm or at room temperature
A microplane is a valuable kitchen tool for zesting oranges and lemons.
Use an orange juicer to juice a fresh orange. This recipe will not be as good if you use store-bought orange juice.
